Rolled lamb shoulder as the name suggests comes from the shoulder of the forequarter. The shoulder is cut into a square shape with the bone removed, then it is boned and rolled so that is holds its shape when cooked. It is a tender cut of meat and can be cooked by moist and dry heat methods including roasting, slow cooking and braising.
